1 tbsp Oil
1 lb Chicken, cut into 1 inch pieces
1 cup Chicken Broth
2 tbsp Honey
1 tbsp Soya Sauce
1/4 cup Peanut Butter
1 tbsp Cornstarch
2 tbsp Ground Ginger
2 green Onions
2 cloves minced Garlic
1/2 Red Pepper, cut into strips*

* I also add in other vegetables (i.e. broccoli, carrots)

Saute chicken in oil. Remove from pan, set aside, keep warm. Combine broth, honey, and soya sauce in pan. Whisk in peanut butter, cornstarch and ginger. Add green onions and garlic, stirring constantly over low heat until blended. Add red pepper and warm chicken. (I usually steam my other vegetables and add them as well when they are already soft). Cook over low heat until thickened. Serve over linguine.
