1 cup Sugar
1/2 cup Margarine
2 Eggs
1 cup Milk
1 tsp Vanilla
2 cups Flour
1 tsp Baking Powder
2 tsp Baking Soda
1 1/2 cups diced Rhubarb

Topping:
1/4 cup Brown Sugar
1/2 tsp Cinnamon

Beat sugar, margarine & eggs. Add milk & vanilla. In a seperate bowl combine flour, baking powder and baking soda. Stir in dry ingredients & rhubarb only until moist. Fill muffin tin 2/3 full, sprinkle topping over top and bake @ 350 for 20 minutes.

Are you familiar with the recipe with rhubarb in the middle? There's a crust on the bottom and rhubarb filling in the middle and meringue on top it's definately on the the best desserts around. It's a hit around here if I'll have time I'll print it out here if you don't have it that is,

Hi Dianna,
I am familiar with that cake (just had it last night actually at a shower for my soon to be SIL!) but I don't have the recipe.
